Instructions
Step 1
start by making the batter for the fish. In a large bowl, add the flour, egg, salt, pepper, and water, and whisk until smooth
Step 2
Place cut fillet pieces in a separate bowl and sprinkle on the cornstarch. Toss together to coat
Step 3
add the fish to the batter and mix together to coat.
Step 4
Add the oil to a large frying pan or wok and heat over medium-high heat until hot
Step 5
While the oil is heating, make the orange sauce. In a medium bowl, mix together the orange juice, zest, agave, soy sauce, garlic, ginger and rice vinegar. Put to the side.
Step 6
When the oil is hot, add the fish. Cook, working in batches as to not overcrowd. Fry until crispy - about 5 minutes, turning occasionally with tongs or a fork.
Step 7
Drain. Add more oil if needed and continue cooking.
Step 8
When finished, you may either discard the oil and use the same pan, or use a new pan. Add the orange sauce to the pain and bring to a boil. Simmer for a few minutes until slightly thickened.
Step 9
If you want to thick further, slowly pour in a cornstarch slurry of 1 tablespoon cornstarch to about 3 tablespoons cold water while stirring.
Step 10
If needed, place the fish back in for a second fry to get extra crispy, drain. Place into a bowl, add sauce, toss and coat.
Step 11
Serve fish over rice.
