Step 1
In a saucepan warm up your leftover spaghetti sauce. In a ceramic pan on medium heat add 1 of avocado oil and allow to heat for a few minutes. Whisk eggs with salt and pepper to taste. Pour into hot pan and stir a little bit but keep flat. Scrape edges with spatula and allow wet mixture to drain onto the heat. Continue to do this quickly until enough of the egg is cooked. Add desired spaghetti sauce on 1/2 of the egg, mozzarella and fresh Parmesan, flip one side over, add 2 tablespoons of water to pan and cover with lid for a few minutes while cheese melts. Cut the omelette in half or two servings and top with fresh chopped basil.
