3 rashersbacon
trimmed of fat, cut into thin strips
2mignonette lettuce
2mango
peeled and cubed
2avocado
peeled and cubed
½ cupcashews
roughly chopped
Dressing
Instructions
Step 1
Fry the bacon in a non-stick pan until brown and crisp. Drain on paper towels and leave to cool.
Step 2
Pull the lettuce apart and wash and dry the leaves. Arrange the lettuce, mangoes and avocados in a serving dish. Sprinkle the bacon and cashews over the top.
Step 3
Pour over combined dressing ingredients.
