Baked rice with confit tomatoes (Ottolenghi)

Step 1
Oven 175C
Step 2
In baking dish place tomatoes, peeled garlic, shallots cut to 3 cm pieces, coriander stems (4cm long), thyme and cinamon, olive oil, salt, pepper.
Step 3
Bake for 1 hour
Step 4
Sprinkle rice on top, without stirring.
Step 5
Increase temperature to 230C
Step 6
Sprinkle salt and pepper on rice and pour boiling water. Cover with foil.
Step 7
Bake for 25 minutes. The leave aside for 10 minutes still covered.
Step 8
Serve with coriander stirred into the rice
