Step 1
Slice each chicken breast in half horizontally. Place each slice between two sheets of plastic wrap and pound with a meat mallet or heavy skillet until even thickness

In a shallow dish mix 1 cup flour, garlic powder, salt, and pepper

In a second shallow dish whisk 2 eggs and 2 TBS flour

In a third shallow dish mix bread crumbs and parmesan cheese
Step 5
Bread each slice of chicken by first coating each slice in the flour mixture, and shaking off the excess. Then dip into the egg mixture, and finally into the bread crumb mixture. Set chicken aside for 15 minutes (this helps the coating adhere to the chicken)
Step 6
In a shallow frying pan add 1/2 cup vegetable oil and heat over medium high heat. Fry chicken, 2 pieces at a time, for 4-5 minutes per side, until golden brown.

Once cooked, remove chicken to a baking sheet with wire rack. Top chicken with marinara and shredded mozzarella and bake at 375° until cheese has melted. Top with fresh basil and serve
