Leek and Cheese Crostata - Elder Scrolls
Combining two of Skyrim's more common ingredients, the result is a
hearty tart that is great for picnics and afternoon snacks, but can also easily
be served as a side dish next to a main course. It is popularly made with
either eidar cheese or goat cheese, but a good cheddar also works well.
Pairs well with: beer, Potage le Magnifique (page 103)

Step 1
Preheat the oven to 350°F and line a baking sheet with parchment
paper. Roll out the pie dough on a lightly floured surface to about %
inch thick. Try to keep a roughly round shape, but uneven edges are
fine. Carefully drape this over the prepared baking sheet and set aside.
Melt the butter in a medium skillet over medium heat. Add the
leeks and cook for about 5 to 1o minutes, until they are soft and
just starting to turn golden brown. Add the flour and stir until
incorporated. Pour the cream in a little at a time, stirring until it has
all been mostly absorbed and the mixture has thickened.
3. Remove from the heat and stir in the cheddar or Gruyère cheese, and
season with salt and pepper to taste, Let this mixture cool for about Io
minutes, then gently transfer it to the middle of the prepared dough.
Spread the flling out until only about 1'% inches around the edges of
the crust have been left bare. Sptinkle the filling with Parmesan, then
gently fold the bare edge of the crust over the filling, overlapping as
you go.
4. Bake 25 minutes, or until the top of the filling is starting to turn
golden. Allow to cool for a few minutes before slicing and serving.
