Trail mix is a popular snack, however, it typically has an energy density of at least 4 calories per gram and in some cases well over 6 calories per gram as well as added fats, sweeteners and preservatives. Our “natural” version has an energy density below 3 calories per gram and qualifies as part of the HighSatiety diet due to its high fibre content of over 6g per 100g. Added fat is kept to a minimum and the sweetness is provided by a small amount of dark chocolate. We have slightly spiced our trail mix with a small amount of paprika, if you would prefer a spice-free version, leave this ingredient out. Trail Mix should still be considered a treat and shouldn’t be eaten in large quantities.

Drain and wash the chickpeas then leave them overnight to dry. In a medium-sized bowl add the dried chickpeas, cashew nuts, almonds, pumpkin seeds, paprika, oil and salt. Mix well then spread them out on a greaseproof sheet on a baking tray. Cook at 180C for 45 to 50 minutes until the chickpeas are roasted and crunchy. Allow them to cool to room temperature then add the dark chocolate, broken up into small pieces. This recipe makes around 400g of trail mix or ten 40g portions.
