Instructions
Step 1
Cook pork in a nonstick skillet over medium heat until browned and no longer pink. Drain fat.
Step 2
Add scallions, garlic, ginger, soy sauce, rice vinegar, sesame oil, and apricot preserves. Stir together and cook for an additional 5 minutes or so.
Step 3
Put coleslaw mix in a large bowl. Pour pork mixture into coleslaw and mix well.
