Pork stir-fry with mixed vegetables and whole wheat noodles

Ingredients

450gpork loin
or tenderloin, thinly sliced
2 tablespoonssoy sauce
1 tablespoonoyster sauce
1 tablespoonhoisin sauce
2 clovesgarlic
minced
1 tablespoonginger
minced
2 tablespoonsvegetable oil
1 headbroccoli
cut into florets
1 cupsnap peas
trimmed
2bell peppers
any color, thinly sliced
Salt
pepper
to taste
Crushed red pepper flakes
optional, for heat
For the noodles:
280gwhole wheat noodles
such as spaghetti or linguine
Salt
for boiling water
Instructions
Step 1
1. Prepare the pork: In a bowl, combine the thinly sliced pork with soy sauce, oyster sauce, and hoisin sauce. Mix well to ensure the pork is evenly coated with the marinade. Let it marinate for at least 15-20 minutes while you prepare the vegetables and noodles.

2. Cook the noodles: Bring a large pot of salted water to a boil. Add the whole wheat noodles and cook according to the package instructions until al dente. Once cooked, drain the noodles and rinse them under cold water to stop the cooking process. Set aside.

3. Stir fry the vegetables: Heat one tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the minced garlic and ginger, and stir-fry for about 30 seconds until fragrant. Add the broccoli florets and snap peas to the skillet and stir-fry for 3-4 minutes, or until they are crisp-tender. Transfer the cooked vegetables to a plate and set aside.

4. Cook the pork: In the same skillet or wok, add another tablespoon of vegetable oil. Add the marinated pork slices to the skillet in a single layer, allowing them to sear without overcrowding. Cook the pork for 2-3 minutes on each side, or until it is browned and cooked through. If desired, sprinkle some crushed red pepper flakes for added heat.

5. Combine the stir fry: Once the pork is cooked, return the cooked vegetables to the skillet. Add the thinly sliced bell peppers and cooked whole wheat noodles to the skillet. Toss everything together gently until the vegetables, pork, and noodles are evenly distributed and heated through. Season with salt and pepper to taste.

6. Serve: Transfer the pork stir fry with mixed vegetables over whole wheat noodles to a large serving platter or individual plates. Garnish with chopped green onions or sesame seeds, if desired. Serve hot and enjoy!
