Instructions
Step 1
In a large pot, cook beef, breaking up with a spatula, for 5 mins or until browned.
Step 2
Add onion, red pepper, and seasoning mix. Cook 10 mins, stirring often, or until vegetables are softened.
Step 3
Stir in tomatoes with juices, corn, and beans. Bring to a boil. Reduce heat, cover and simmer for 20 minutes.
Step 4
Top with sour cream, cheese and cilantro.
