Ingredients

2 lbsMalanga
peeled and cut into quarters
1 cupmilk
1yellow onion
chopped
4cloves garlic
chopped
0.5 barcream cheese
1 tspsalt
0.5 stickbutter

Instructions
Step 1
Set a pot with water to boil. When water is at a rolling boil add the malanga pieces and boil for 15 minutes until malanga is "fall apart" tender
Step 2
In a separate small pot add 1 cup of milk, 1 chopped yellow onion, and 4 cloves of chopped garlic. Bring to a simmer for 5 minutes until onions are soft and translucent
Step 3
Remove malanga from pot and place into a deep bowl along with 4-6 small ladles of the reserve boiling liquid. Add in the milk sauce and the cream cheese. It's ok if a few onions fall in.
Step 4
Blend up the malanga with an immersion blender. When it is creamy, add 1/2 stick of butter and continue blending. Add a tsp of salt, blend it in and taste. Adjust seasoning if needed. If mixture is too thick add some more reserve water until you reach the desired consistency
Step 5
Serve in a bowl

Alternatively you can add some cheddar cheese to the top of the bowl and bake until the cheese bubbles and chars a bit. "Au Gratin". Air fryer 400 degrees for 10 minutes. Oven 350 degrees for 15 minutes
