Instructions
Step 1
wash and cut leeks and wash asparagus, steam the asparagus for a couple minutes then add the leeks and steam for a couple more minutes.
Step 2
line a tart pan with greaseproof paper. layer each filo sheet one at a time, brushing olive oil over each layer before adding the next, fold or scrunch down the excess on the sides. bake at gas mark 4 for 5 mins then leave in the oven until the greens are cooked
Step 3
pour out water from the pan and fry in a bit of olive oil, add basil, oregano, salt and pepper. cook for a few minutes.
Step 4
lay the leeks evenly over the pastry then the whole asparagus’ in an alternating fashion.
Step 5
mix eggs cream milk and pesto together pour over the vegetables. Drizzle the lemon juice over it then add some pepper and salt. then grate some cheese on top. Put in the oven for 30 mins at gas mark 4.
