Step 1
Lightly brush a pan with oil then add a tortilla to the pan
Step 2
Add half of the tomato sauce and spread it all over the tortilla . Sprinkle half of the cheese followed by the diced peppers ( use mixed colors if you like ) fresh chopped herbs of choice then add the four eggs and season with salt and pepper

Step 3
Place another tortilla carefully on top of the eggs then put a lid on cover and cook for about 6 minutes on medium heat until the bottom is crispy .
Step 4
Use a plate to cover the top of the pan then flip over the tortilla . Add the rest of the tomato sauce the cheese and a sliced tomato on top then season with salt and pepper and sprinkle the rocket on top. Cook on the stove until the cheese melts or cook under the grill if you prefer . Enjoy
