Instructions
Step 1
TIP: An hour or more ahead the main recipe, complete steps 2-6 to make pickled onions and dressing.
Step 2
PICKLED ONIONS PREP: Slice half of a red onion into strips and set aside to use. (Store the remaining half for another recipe.)
Step 3
In a medium sized pot, add 1cup water and 1cup apple cider vinegar. Bring to a boil.
Step 4
Once liquid is heated, add 3tbsp sugar and 1/2tsp salt and stir until dissolved.
Step 5
In a mason jar or bowl with lid, place slices of onion and pour the apple cider sugar water liquid over the onions and cover for 1-3 hours. (30 minute minimum)
Step 6
DRESSING PREP: Combine the following ingredients and stir or shake in mixing container or condiments bottle.
-5tsp Chick Fil A Sauce
-1/4c Honey
-1 tbsp Apple Cider Vinegar
-1/2 tsp Salt (You can increase or decrease measurements of the dressing to your taste.)
Step 7
MAIN RECIPE: Oven bake the popcorn chicken per label instructions. TIP: Prep the other ingredients during bake time.
Step 8
Stovetop boil 3/4c white rice until fully cooked. TIP: Prep other ingredients during cook time.
Step 9
Rinse and strain black beans until water rinses clear and set aside.
Step 10
Drain corn and set aside. Rinse if desired.
Step 11
When chicken and rice have finished cooking, lay flat tortillas on individual plates and begin adding toppings as described in steps 12-17.
Step 12
Spoon red pepper hummus around the outer edges of the tortilla. TIP: This will help seal it shut when closing the wrap.
Step 13
In the center of the tortilla add 2-3 spoon fulls of cooked rice.
Top with 1-2 average spoon fulls black beans and 1-2 average spoon fulls of corn.
A pinch of pepper or more if desired.
Step 14
Add just a few pieces of the softened red onion from the jar over the rice mixture.
Step 15
Add a thin layer of spring mix lettuce over the onions.
Step 16
Shred pieces of cooked popcorn chicken and places on top of the lettuce.
Step 17
Drizzle the honey apple cider dressing sauce over the chicken.
Step 18
Fold the wrap to seal all the ingredients inside and ENJOY!
