Instructions
Step 1
Beat the egg.


Step 2
Combine flour, sugar, baking powder, and salt in a large bowl.


Step 3
Make a well in the center of dry mix and pour in milk, oil and egg. Mix until smooth.


Step 4
Heat a cast iron skillet (spreads heat easily) with non stick spray over medium-high heat first.


Step 5
Turn the heat from medium-high to low-medium-low, and repeat step 5.


Step 6
Scoop 1/3 cup batter onto the skillet, and cook until bubbles form and the edges are dry. Use a spatula and shimmy it until pancake is released from skillet, then flip and cook until browned on the other side.

Step 7
Serve hot and top with maple syrup/honey/whatever you fancy and enjoy!
