Instructions
Step 1
Add milk to a very large pot. This must be full Fat . Heat on medium heat stirring so it doesn’t burn or boil over . Bring to a boil slowly this will take about 15 minutes .
Step 2
Simmer the milk for 30 seconds then add the juice of two lemons in and cook a further 30 seconds
Step 3
Remove the pit from the heat and stir gently so the curds separate . Strain the mix into a sieve with a cheesecloth or muslin cloth ( keep the whey byproduct it has lots of probiotics . Now bring the sides of the cheese cloth together fit with a string then tie it to a cupboard with a bowl under so the liquid drains out and the cheese forms up . Leave it for 2 hours
Step 4
Once firm use the cheese as you like and keep in a sealed sterilized container in the fridge for up to 5 days
