Green goddess bowl

"METHOD 1. Fill a medium saucepan with water and bring to a boil. Add broccoli to boiling water and allow to boil for 1 minute or until just tender. Remove and cool with iced water. Set aside. 2. Heat the olive oil in a large frying pan over medium heat. Add pesto and spread over pan, then add broccoli. Stir briefly. 3. Add quinoa and lemon juice, stir briefly and remove from heat. 4. In a mixing bowl, combine the quinoa mix with avocado, sauerkraut and zucchini, then divide the mix between 3 Coconut Bowls. 5. Top with hemp seeds and pepitas, and serve with basil leaves and a wedge of lemon. Sprinkle with salt and pepper to taste." From "Vegan Bowls Volume 2 eBook"
