Instructions

Step 1
In a food processor, add your avocado and flour and mix everything for 30-45 seconds or until you have a smooth dough.
Step 2
Divide your dough into 4 parts and roll out each part into a long sausage. Cut your “sausage” into pieces of approximately 1.5cm, roll them out into balls and press the centre to give the classic “orecchiette” shape.
Step 3
Boil your fresh pasta in some salted water for 3-4 minutes or until they come to surface.
Step 4
In the meantime, cook some cherry tomatoes with olive oil and garlic for 10 minutes and season with salt and pepper. Blend your tomatoes and finally mix your sauce with your pasta. Buon appetito!
