Shrimp Curry with Cauliflower Rice

A heart healthy shrimp curry served over cauliflower rice

Instructions

Step 1
Heat large skillet or saucier over medium high heat. Season the shrimp with 1/2 Tbl. Garam Masala. Quickly sear the shrimp until just barely cooked, and remove from skillet. Add more grapeseed oil if necessary.
Step 2
Add the chopped onions, ginger and garlic to the pot and sauté for 4 minutes until they turn golden brown. Keep stirring at regular intervals. Add the green beans, and saute for 2 minutes.
Step 3
Add the chopped tomatoes and spices. Sauté for another 4 minutes, while stirring regularly.
Step 4
Add the lemon juice, water and stir. Deglaze and scrape off anything stuck to the bottom of the pot. Bring to a boil, and allow to cook for 5 minutes.
Step 5
Right before serving, add in the shrimp, and then serve over cauliflower rice in bowls.
Step 6
Garnish with cilantro!
