Instructions
Step 1
Peel and crush garlic cloves. (This can be done in blender after peeling)
Step 2
Peel and finely chop ginger. (This can be done in blender after peeling)
Step 3
Finely chop cilantro. (This can be done in blender)
Step 4
Put the sesame seed oil, garlic, ginger, soy/tamari, maple syrup, peanut butter and rice vinegar into blender.
Step 5
Add two tablespoons of water and blend together until smooth. Refrigerate until needed.
Step 6
Cook soba noodles according to package instructions.
Step 7
Drain noodles and immediately transfer into large bowl of cool water.
Step 8
Rinse further under running cold water to remove the starchy coating and drain thoroughly.
Step 9
Remove sauce from fridge, add noodles, tofu, edamame and most of the chopped cilantro and scallions.
Step 10
Toss well to combine and scatter remaining cilantro and scallions.
