Instructions
Step 1
Heat up olive oil and add chopped onions. Cook about 15 mns until onions are getting soft and some pieces have started to caramelize at the edges. Add all other ingredients and continue cooking until onions are nice and "jammy".
Step 2
Remove from heat and let cool a bit then transfer to a mixing bowl and using an immersion blender coarsely puree the jam. This will take just 2 or 3 pulses and is optional if you want a more coarse jam.
Step 3
if you don't have balsamic glaze, double sugar amount. You can also use just thyme or just rosemary depending on taste.
