Ingredients

Tacos
3 cupsall-purpose flour
1 teaspoonsalt
1 teaspoonbaking powder
⅓ cupextra virgin olive oil
vegetable oil or other fairly neutral flavored oil
1 cupwater
warm
Pickled onions
Guacamole
Slaw
Fish
Instructions
Pickle the onions
Step 1
Slice the red onion and place in a mason jar.
Step 2
Heat the vinegar and water together. Stir in the salt and sugar and adjust to taste.
Step 3
Once simmering, remove from the heat and pour over the onions.
Step 4
Close the jar and leave for at least 2 hours.
The Guacamole
Step 5
Scoop the avocados into a mixing bowl. Add the sour cream along with the rest of ingredients and mash until smooth. Season to taste.
The Slaw
Step 6
Using 1/4 of the cabbage, thinly slice and add to a mixing bowl. Add the mayonnaise, vinegar, lime and season to taste.
The Tacos
Step 7
In a large mixing bowl, add the flour, salt and baking powder. Then pour in the olive oil and water. Mix well until a shaggy dough has formed.
Step 8
On a floured board, knead the dough for 3 - 4 minutes until firm.
Step 9
Place in an oiled bowl, cover and leave to rest for the 30 minutes.
Step 10
Slice the dough into golf ball size shapes. Use a rolling pin to flatten into tacos.
Step 11
If using a hob, place the tacos in medium - high heat pan for 1 minute (roughly) each side until slightly charred.
The Fish

Slice the fish diagonally along the flesh roughly 1 inch apart on both sides.
Step 13
Pour over the olive oil along with the seasonings and rub well. Slice the lime and place in the cavity of the fish.
Step 14
Place in a hot oven at 210c/410f for 15 - 18 minutes (depending on size) until crispy.
Step 15
Shred the fish and be careful to avoid the bones.
Assembly
Step 16
Add the guacamole to the taco and top with the fish, slaw and pickles. Garnish with freshly chopped coriander and a squeeze of lime.
