Filet-o- Fish copycat
Filet-o-Fish is the best and if you are missing it because you are avoiding a certain fast food joint, well now you can make it at home! With as much tartar sauce as you want and a full slice of cheese, instead of a measly misplaced half slice.

Filet-o- Fish copycat
Serves 8-10
⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 kg boneless, skinless firm white fish, I used Basa filets, cut into bun sized pieces and patted dry
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Batter
2 eggs
1/4 cup mayonnaise
2 tbsp flour
2 tbsp cornstarch
1 tsp salt
1/8 tsp turmeric
1/4 tsp onion powder
1/4 tsp garlic powder
1/4 tsp paprika

Crumbs
2 cups panko crumbs
2 tbsp cornstarch
1/4 tsp onion powder
1/4 tsp garlic powder

Tartar sauce: 1 cup mayonnaise, 1/2 tsp onion powder, 1/4 tsp mustard, 1/2 tsp dried dill, 3/4 tsp sugar, 2 tbsp dill pickles finely chopped, 1/2 tsp finely chopped capers, 1 tbsp pickle juice

Whisk together the ingredients for the batter in a bowl. In a small food processor, pulse the ingredients together for the crumbs until it looks like slightly coarse sand, pour in a wide bowl. Take each piece of fish and dip it into the batter, shaking off the excess, then dip in the crumbs, pressing them into the fish. Fry over medium heat in a generous amount of oil for 3-5 minutes per side.
Combine all the ingredients together for the tartar sauce.
To make the filet-o-fish, steam your buns over boiling water on a rack until warm and soft, spread a generous amount of tartar sauce, a (full!) slice of processed cheese, the fish and top with more tartar sauce and enjoy!
