Instructions

Step 1
Get your veggies ready: Chop up the mint leaves, tomatoes, onion, garlic, chiles moritas, potatoes, carrots, and squash. Set them aside for later.
Step 2
Heat up a bit of oil in a big pot on medium. Toss in the chopped onion and cook until it’s nice and translucent. Then, add the tomatoes and let them cook until they turn into a yummy jam-like mixture.
Step 3
Once your onions and tomatoes are soft, toss in the garlic. Be sure not to let it burn!
Step 4
While those veggies are doing their thing, let’s make the albondigas. Grab a big bowl and mix together the ground beef, salt, pepper, chopped mint, and rice. Gently mix it up, then crack in the eggs and give it another mix.
Step 5
Using your hands, form the meat mixture into balls. Try to make them all about the same size.
Step 6
Now, carefully add the chiles moritas to the pot, followed by your albondigas. Pour in a cup of water, cover it up, and let it cook for 10-15 minutes until the albondigas firm up a bit.
Step 7
Once they’re holding together nicely, pour in about 12 cups of water. Throw in the chopped potatoes, carrots, and chicken bouillon. Mix it all up, cover it, and let it cook for 20-30 minutes.
Step 8
After that, toss in the chopped squash, cover it up again, and let it cook for another 15 minutes or so.
Step 9
When the veggies are tender and the albondigas are cooked through, you’re ready to eat!
