Instructions
Step 1
1. For the syrup, mix everything together in a pot, being to a boil and then simmer for 10 minutes. Let cool completely.

2. Dry the phyllo in the oven at 100C or let it sit on the counter for 20 minutes.

3. Whisk together , oil, sugar, orange zest and eggs.
Step 4
4. Add yoghurt, orange juice, and vanilla. Whisk well.
Step 5
5. Add baking powder and whisk briefly.
Step 6
6. Crumble the phyllo and a gradually add to the rest while whisking.
Step 7
7. Oil the bottom of a baking tray approx 20x30cm and pour the mixture into the pan. Bake at 180C /350F for 40-50 minutes. Testing with a skewer, if it comes out clean, it’s done.
Step 8
8. Pole holes in the cake and then pour the syrup ladle by ladle on top. Wait until the cake has soaked up the syrup before adding more.
Step 9
9. Let it rest for at least 1 hour before eating… I know it’s hard but trust me.
