Step 1
Pre-heat your oven to 350
Step 2
Slice the chicken in half and baste in the basil pesto
Step 3
On medium, heat olive oil and pan-fry the chicken slices.

While the chicken cooks, bake the ciabatta for 3 minutes

Once the chicken is just cooked through, slice and assemble your sandwiches. For a stronger flavor, brush the basil pesto on your bread or make an aioli with mayo.
Step 6
Bake the sandwich for 3 minutes, then flip and press with a spatula. Cook for another 2 minutes or until the cheese has melted.
