Ingredients
4 servings
chicken breasts
large, sliced into cubes
½ cupflour
½ tspsalt
½ tsppepper
½ tsppaprika
½ tspgarlic powder
4 Tbspolive oil
divided
2 Tbspbutter
½ tspminced garlic
1 tspred pepper flakes
optional
1 tspitalian seasonings
½ cupsun dried tomatoes
chopped
2 cupschicken broth
2 Tbspflour
20 ozfresh tortellini
1 cupheavy cream
2 cupsspinach
chopped, fresh
1 cupparmesan cheese
2 Tfresh basil
chopped, for garnish
Instructions
Step 1
mix together flour, salt, pepper, garlic, and paprika
Step 2
dredge chicken breasts into the flour/seasoning mixture
Step 3
in a skillet heat 2 Tbsp olive oil and butter on medium heat
Step 4
cook chicken for 4-5 minutes on each side until golden brown and cooked through. Remove from heat and set aside.
Step 5
To an heavy pot, add 2 Tbsp olive oil, garlic, sundried tomatoes, Italian seasoning, and red pepper flakes. Cook 3-4 mins until fragrant on medium heat.
Step 6
Add flour with whisk. Whisk 1-2 mins to create a roux.
Step 7
add broth and bring to a boil. Cook 3-5 minutes.
Step 8
Add tortellini. Stir together well and let simmer 2 mins.
Step 9
Turn heat off, add heavy cream, Parmesan cheese, and spinach. Stir until spinach wilts.
Step 10
Add the chicken into the pan and heat and serve. Sprinkle with basil
