Nothing beats a hearty and warm vegetable soup for filling bellies, hearts and keeping $$ in your wallet. Here is my basic vege soup recipe that can be adjusted to any vege you may have on hand.

Ingredients
12 servings
4carrots
grated
4Onions
chopped
1 cupCelery
chopped
Bacon Bones
optional
Pork Hock
optional
Bone
optional, Just add any of the above if you have them
2 cupsPumpkin
Grated, optional
1Kumara
Grated, optional
2Potatoes
Grated, optional
2 cupssilverbeet
or any other greens like spinach, Kale etc, chopped
salt
pepper
bay leaf
parsley
optional
Sage
optional
oregano
optional
water
boiling, to fill pot
Soup mix
or grains, optional to bulk up meal
vegetable stock powder
optional
Instructions
Step 1
Dice onion and celery
Step 2
Grate carrot
Step 3
Add to a large stock or soup pot over medium high heat and saute in a little oil.
Step 4
Add any meat or bones you've decided to add, you can either purchase ham hock or bacon bones specifically for soup or the deli counter usually sell ham bones, or use a bone leftover from roast pork, lamb or beef (shin bones are best but any will do as long as they are large enough to see so you can eat around them)

Saute until caramelised and smelling fragrant

Add the rest of your vegetables,

add in any herbs (fresh or dried) pluse your bay leaves
Step 8
if you want to make this in the slow cooker now would be the time to tip it all into slow cooker, then deglaze pot with boiling water and add water to slow cooker.
Step 9
Optional Add Soup grains or soup mix to bulk it up (this makes the soup go alot further but also makes the bottom likely to catch so stir more often)
Step 10
Fill to 3/4 full with boiling water and allow to simmer for 3-6 hrs stiring occasionally.
Step 11
taste and add vegetable stock(optional), Salt and pepper to taste
Step 12
Serve with a know of Butter, Spoon of yoghurt, Milk or cream and fresh bead. Your family will love it!
