Instructions
Step 1
Saute onions and chicken in oil until chicken is cooked through. Remove chicken and set aside.
Step 2
Add ginger and garlic to pan and saute briefly.
Step 3
Add quinoa/rice, spices and broth and bring to a simmer for about 20 minutes. In the meantime, shred the chicken.
Step 4
Once the quinoa is cooked, add chicken back in along with spinach and stir well to combine.
Step 5
Season with lime juice, soy sauce, fish sauce and herbs.
