Instructions

Step 1
Preheat your oven to 350°F (175°C). Grease or line a muffin tin with paper liners.
Step 2
In a large mixing bowl, combine the mashed bananas, Greek yogurt, honey, applesauce, egg whites, and vanilla extract. Mix until well combined.
Step 3
In a separate bowl, whisk together the whole wheat flour, oats, baking powder, baking soda, cinnamon, and salt.
Step 4
Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix; a few lumps are okay.
Step 5
Divide the batter evenly among the muffin cups, filling each about 3/4 full.
Step 6
If using, sprinkle the chopped nuts or dark chocolate chips on top of each muffin.
Step 7
Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Step 8
Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
