Ingredients
6 servings
14 ozsausage
or chorizo
1red bell pepper
1yellow bell pepper
0.5onion
diced
5garlic
minced
1 teaspoonsalt
black pepper
1 teaspoonchili flakes
8 ozdry rigatoni pasta
3 cupsbroth
1 x 14 ozdiced tomatoes
can
1 heaping tablespoontomato paste
1 cupheavy whipping cream
2 handfulsspinach
¾ cupmozzarella
ripped, strips
½ cupparmesan cheese
8 ozcherry tomatoes
cut in half
Parsley
chopped, for garnish
Instructions
Step 1
Slice peppers and dice onions.
Step 2
Slice sausage into pieces
Step 3
In one tablespoon olive oil sear sausage pieces until brown . Do not burn. Set aside
Step 4
In same pan add one tablespoon olive oil sauté onions , peppers.
Step 5
Add garlic . Season with one teaspoon salt and black pepper. Cook 2 minutes.
Step 6
Add uncooked pasta, broth , diced tomatoes and tomato paste. Mix well and cover with a lid.
Step 7
Cook cover on medium heat ( not high heat) 10-12 minutes to cook the pasta
Step 8
Uncover and mix. Add heavy whipping cream, adjust the salt and chili flakes.
Step 9
Add spinach and mix well
Step 10
Add the mozzarella pieces and Parmesan cheese. Mix.
Step 11
Tuck the sausage back in
Step 12
Garnish with cut up cherry tomatoes and parsley
