Instructions
Step 1
Put 2 potatoes in a chopper and julienne them. Add a bit of carrots. This is optional. Add about 1/2 teaspoon of salt and a little pepper too. Mix well.
Step 2
Add 1 tablespoon of oil to a pan. Wet a rice paper, shake it off, and place it in the unheated pan. Put half the sliced potatoes on the rice paper. Add cheese if desired. Add the rest of the potatoes and even them out. Wet another rice paper, shake it, and cover the potatoes. Cover the pan, cook on high for 1 minute, then simmer for 5 minutes.
Step 3
After 5 minutes, flip the pancake with a spatula; it should be golden brown. Add half a tablespoon of oil to crisp the bottom. Cover and cook on low heat for another 5 minutes. Once done, cut the savory rice paper potato pancake into pieces and serve. Perfect for brunch or a snack!
