Instructions

Step 1
Preheat oven to 425 and line a muffin tin with 8 liners.
Step 2
In a large bowl mix the egg whites, coconut oil, applesauce, vanilla, and coconut sugar together until smooth.
Step 3
Then add in the protein powder, flour, baking powder, cinnamon, and mix. Be careful not to overman the batter as this could result in tough muffins.
Step 4
Divide the batter evenly into muffin liners and sprinkle with the cinnamon/sugar topping.
Step 5
Bake muffins at 425 F for 8 minutes, then reduce heat to 350 F and bake for an additional 12 minutes.
Step 6
Let cool and enjoy.
