For the broth
2 tblschili garlic sauce
2 tblslight sesame oil
or avocado oil
dried porcini mushrooms
chopped
3 clovesgarlic
smashed and minced
4scallions
thinly sliced white + greens
3 cupslow-sodium vegetable broth
2 Tbsptomato paste
1 TBSPlow-sodium soy sauce
4 ouncesramen noodles

Instructions
Step 1
Add oil to a pan on med-high heat. Saute garlic, gr. onions, and mushrooms until fragrant (1-2) minutes.
Step 2
Add broth, soy sauce, tomato paste, and chili-garlic sauce.
Step 3
Simmer, covered, on med-low for 10 minutes.
Step 4
While broth simmers, make soft-boiled eggs and cook edamame (if using either for garnishes).
Step 5
Prep toppings.
Step 6
For a thicker broth, cook ramen directly in broth. Be prepared to serve immediately. For thinner broth, cook ramen in separate pot of water.
