Instructions

Step 1
Sauté Sausages: Place a saucepan over high heat, add 15g of olive oil and sauté the turkey sausages until nicely colored. Remove with a slotted spoon, drain on some kitchen paper, and set aside.
Step 2
Sauté Vegetables: In the same pan, add the remaining olive oil (45-60g), chopped onion, and freshly ground black pepper; sauté for one minute. Add garlic and tomato paste and sauté for one more minute. Add the peppers and continue sautéing.
Step 3
Deglaze and Cook: Deglaze with red wine, scraping the bottom of the pan, and wait for it to evaporate. Add stevia, chopped tomatoes, water, bay leaf, chili peppers (if using), and paprika. Turn the heat down to medium and cook for 25-30 minutes with the lid on until the peppers tenderize.
Step 4
Combine and Thicken: Add the sausages back to the pan and cook a little bit longer until the sauce thickens. Check for seasoning; with spicy sausages, additional salt might not be necessary. Adjust with more black pepper if needed.
Step 5
Serve: Serve while still hot with whole grain bread or as a main dish with brown basmati rice. Enjoy!
