Instructions

Step 1
In a large pot, heat ghee/oil and sauté chopped onions until translucent.
Step 2
Add the meat and sear on high heat. Add ginger paste and continue cooking until the meat changes color.
Step 3
Add nihari masala and cook for another 5 minutes until fragrant.
Step 4
Pour in water and slow cook for 3-4 hours until the meat is tender. Alternatively, pressure cook for 45 minutes.
Step 5
Skim the oil from the surface and set aside for later use.
Step 6
Mix atta with water until lump-free, then drizzle slowly into the pot while stirring continuously.
Step 7
Simmer on low heat until the mixture thickens to your desired consistency.
Step 8
For the masala, grind all the masala ingredients finely and add them to the pot along with the turmeric, salt, chilli powder, Kashmiri chilli powder, and ginger powder.
Step 9
Dish out the nihari and warm up the skimmed oil to layer on top. Garnish with ginger julienne, green chillies, chopped coriander, and lemon juice.

Serve and enjoy your delicious nihari!

Step 11
Adjust the spice levels according to your preference. You can increase or decrease the amount of chilli powder and Kashmiri chilli powder to suit your taste.

Make sure to cook the nihari on low heat for a long time to allow the flavors to develop and the meat to become tender.

When adding the flour slurry, make sure to stir continuously to prevent lumps from forming.

Feel free to customize the garnishes based on your preferences. You can also add sliced boiled eggs or fried onions as additional toppings.

Nihari tastes even better when served with hot naan or steamed rice.

Store any leftover nihari in an airtight container in the refrigerator for up to 3-4 days. Reheat gently on the stovetop or in the microwave before serving.
