Spicy Garlic Shrimp and Cauliflower

Instructions
Step 1
Heat 1 Tbsp of oil in a large skillet over medium-high heat.
Step 2
Once hot, add the shrimp and cook for 1-2 minutes on each side until cooked through. Season with salt and pepper and set aside on a plate.
Step 3
In the same skillet and a drizzle of olive oil, onion and garlic, saute until softened. Add the cauliflower rice, spinach, chili flakes and season generously with salt and pepper. Stir fry for about 5 minutes.
Step 4
Add the shrimp back to the pan and cook for about 1-2 minutes until reheated.
