Sauté Vegetables:
In a large pot, sauté the garlic and chopped onions over medium heat until translucent. Add the thinly sliced carrots (and celery if using). Continue to sauté for a few minutes. Add the chopped red jalapeño pepper. Sauté for a few more minutes.

Season and Add Potatoes: Season the vegetables with salt, black pepper, paprika, garlic powder, and onion powder. Add the thinly sliced potatoes to the pot and continue to sauté for a few more minutes.

Step 3
Add Water and Chickpeas: Pour enough water into the pot to cover the vegetables. Add a generous amount of paprika. Add the drained and rinsed chickpeas to the pot. Bring the mixture to a simmer and let it cook until the vegetables are slightly soft, about 10-15 minutes.

Prepare the Fish: While the vegetables are simmering, season the fish fillets with the fish seasoning blend and a little bit of olive oil. Let the fish sit and absorb the seasoning.

Cook the Fish: Once the vegetables are ready, place the seasoned fish fillets on top of the simmering vegetables. Cover the pot and let it cook until the fish is fully cooked through, about 10-15 minutes.
