Ingredients

3 cupcook no salt added chickpeas
cans 15 oz, rinsed and drained, or other beans- black, white & red kidney, cannellini etc
½ cupAquafava
the drained chick pea juice
1 ½ tablespoonslemon juice
2 teaspoonsground cumin
1 ½ teaspoonsground coriander
1 teaspoongarlic
minced
¼ tspfine sea salt
¼ tspfreshly ground pepper
2 Tbspfresh herbs
chopped, such as mint, cilantro, Rosemary
paprika
for garnish
Instructions
Step 1
Place chickpeas, START with 1/4 cup (1/2 cup) of Aquafaba, lemon juice, cumin, coriander, garlic, salt, and pepper in a food processor with a metal blade. Process until smooth and creamy, adding more Aquafaba 1/4 cup at a time. as needed to achieve desired consistency.
Step 2
Add extra garlic, lemon juice or pepper to taste
Step 3
Add fresh herbs if using. Pulse briefly to incorporate, Herbs should speckle the mixture rather than turn it completely green.
Step 4
Spoon hummus into a serving bowl. Sprinkle with paprika before serving.
