Ingredients

240gcan chickpeas
drained
½ tspbaking soda
1bay leaf
0.5lemon
juice only
1garlic clove
1beetroot
boiled
2ice cubes
1 Tbsptahini
salt
to taste
For the topping:
Instructions
Step 1
Rinse chickpeas and transfer them to the pot. Add water, baking soda, bay leave and bring it to a boil. Once boiling, reduce heat and cook them for 20 minutes.
Step 2
When cooked, discard the bay leaf, drain chickpeas and transfer to a large bowl. Pour in cold water and take out all skin using a strainer.
Step 3
Drain and transfer them to a food processor or high powered blender. Add lemon juice and cut into cubes cooked beetroot. Blend until everything is combined.
Step 4
Then, add garlic, salt, ice cubes and tahini. Blend until smooth or until you reach desired consistency, stopping to scrape down any tahini stuck to the sides and bottom of the processor as necessary.
Step 5
Scrape the hummus into a serving bowl or platter, and use a spoon to create nice swooshes on top. Drizzle with olive oil, and sprinkle with paprika, black pepper and cumin. Top with goat cheese and mint if desired.
Step 6
Serve with flatbread and enjoy!
