Instructions

Step 1
1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.
Step 2
2. In a large bowl, toss the sweet potato cubes with olive oil, garlic powder, thyme, salt, and pepper. Spread the seasoned sweet potatoes in an even layer on the prepared baking sheet.
Step 3
3. Place the salmon fillets on top of the sweet potatoes. Season the salmon with salt and pepper.
Step 4
4. Arrange the asparagus spears around the salmon and sweet potatoes on the baking sheet.
Step 5
5. **Optional:** If using, place lemon slices on top of the salmon.
Step 6
6. Roast for 15-20 minutes, or until the salmon is cooked through (flaky with a fork) and the sweet potatoes are tender.
Step 7
7. Broil for the last minute or two (optional) for a slightly crispy top on the salmon. Watch closely to avoid burning.
Step 8
8. Garnish with chopped fresh parsley (optional) and serve immediately.
