Instructions

Step 1
Use half the oil to saute onion and bell peppers. Stir in spinach and cook until wilted. Remove from pan and set aside to cool.
Step 2
Whisk together eggs and whites. Heat pan to medium and cook eggs until just starting to set, then add salsa and cook off some of the moisture and incorporate into eggs.
Step 3
Let fillings cool to room temperature. In each tortilla, add 1/6 of eggs, 1/6 of vegetable mixture, and 1/6 of shredded cheese. Ideally, mix it all together to get more uniform bites. Roll into compact burrito shape. Wrap in foil if freezing.
Step 4
To reheat: wrap in a paper towel and microwave for 2 minutes (longer if directly from frozen).
