Instructions

Step 1
Brown meat on all sides in cast iron casserole on high/med high. Set aside
Step 2
Reduce heat to medium. Add sliced onion, garlic, and ginger and cook, stirring from time to time until onions are tender and lightly browned, about 15 minutes.
Step 3
Add tomato and spices and stir. Return meat on top of the base and add liquid to come up 1/3 of the meat.
Step 4
Increase heat and bring to a boil on the stove, then slip into the oven. After 30 minutes, check to make sure the liquid is barely simmering. About every 30 minutes or so turn the meat over and check the level of the liquid, topping up as needed.
Step 5
Cook until meat is tender and falls apart at the touch of a fork.
Step 6
Once meat is cooked, remove to rest, remove any large pieces of aromatics, and blend the liquid. Strain through a sieve and discard solids.
Step 7
Skim fat from the sauce and taste, adjusting salt as needed. Add yoghurt.
Step 8
Either shred or chop meat and return to sauce, or slice and serve on top. Thicken sauce on stovetop as necessary. Serve with rice.
