Mire poix - 1 carrot ,1 onion,1 celery finely diced .
Pork mince can be substituted with lamb mince.
Use a dry wine, we use Red Carbernet.

400 gramsfresh pasta
225 gramsBeef mince
225 gramsPork mince
2Garlic Cloves
120 mlsDry wine
2 x 400 gramsTomatoes
Tinned, Chopped

Instructions
Step 1
Place large saucepan on medium heat with oil.
Step 2
Add Mirepoix and cook for 5 - 10 minutes until soft.
Step 3
Add garlic and cook for further 2 minutes.
Step 4
Turn the heat to high add mince and cook breaking it up as you go until browned.
Step 5
(Optional add chilli and fry for 1 minute). Add red wine cook for 1 minute or until the alcohol smell has gone.
Step 6
Add the stock cubes, tomato purée ,Italian herbs, Worcester and soy sauce. Mix in well
Step 7
Add all of the chopped tomatoes
Step 8
Add 3/4 cup of water cover with lid and simmer on low for 2 - 2.5 hours. Stirring every 30 minutes. Cover and uncover to control how thick it is. Add more water if need 1/4 cup at a time
Step 9
After 2 hours cook pasta as per packet in the sauce.
Step 10
Serve with fresh parsley and topp with grated cheese
