Balinese BBQ Prawns

Instructions

Step 1
Make a long vertical cut on the belly side of the prawns, then squeeze the head to remove the orange dirty part and the vein
Step 2
Insert a long skewer in each prawn from tail to head
Step 3
Lightly season the prawns with salt and pepper and set them aside
Step 4
Add yellow onion, garlic, and pineapple to a blender or food processor and blend until smooth. Set aside
Step 5
Heat a wok with cooking oil and stir fry shrimp paste just until fragrant (stir continuously so it doesn’t get burnt and taste bitter)
Step 6
Add mashed onion, garlic, and pineapple and stir fry until aromatic
Step 7
Add oyster sauce, barbecue sauce, water, salt, pepper, and sugar, and bring to boil. Turn off the heat and set aside
Step 8
Squeeze lemon juice and stir to mix
Step 9
Lightly grease your grill pan with oil and set to medium heat
Step 10
When the grill is hot enough, place the prawns (shell sides up)
Step 11
When the prawns start turning into orange color, bring to low heat and flip the prawns and generously baste and brush the meaty sides of the prawns with the spice mixture
Step 12
Flip and brush both sides of the prawns 2 to 3 times and cook until the prawns are thoroughly cooked and the spice mixture is aromatic
