Ingredients
2 servings

olive oil
to coat pan

10 clovesgarlic
roughly chopped

red pepper flakes
or more if you like spice

6 ozdried pasta
tagliolini or similar, we used spaghetti

2 knobsbutter
large

⅓ cuppasta water
reserved

1lemon
zest & juice of, large, or 2 small lemons

2 handfulsrocket
or arugula

grated parmesan
freshly

salt
to taste

pepper
to taste

pine nuts
toasted, for garnish
Instructions
Step 1
Cook pasta per package instructions (try to time pasta to be done after you saute the garlic and red pepper flakes). Reserve a couple ladles of pasta water before straining pasta!
Step 2
In a large sauté pan (12 in if available) Saute garlic in olive oil until fragrant, about 2 minutes, then add a pinch of salt, pepper, and red pepper flakes, cook for 1 minute.
Step 3
Add hot, cooked pasta to the pan, stir, then add butter and stir again.
Step 4
Once butter is melted, turn off the heat and add pasta water and lemon juice and stir. Top with lemon zest, parmesan, and season with salt and pepper and stir once more.
Step 5
Add rocket to the pasta and stir to wilt. Serve immediately in a warmed bowl!
Step 6
Serving suggestion: top with toasted pine nuts and salmon or shrimp!
