Chicken Tacos

Nothing beats some delicious chicken tacos and these might be the best ones I've made yet. Seasoned and juicy chicken bites over a light slaw with a delicious homemade guacamole! If you have a molcajete, I highly recommend you make your guacamole in it. If you don't have one, it's a great item to have. My friends over a Cemcui in Mexico handcraft each one and they make amazing pieces that can stay out on your counter year round.

Step 1
Preheat oven to 400 degrees.

Place onion and jalapeños on a baking sheet and roast for 15-20 minutes until slightly charred.

Preheat air fryer to 400 degrees.

In a bowl mix together your diced chicken along with seasonings.

Arrange on a single try and air fry for 15-20 minutes.

Once the onion and jalapeños have some color, remove from the oven and dice fine.
Step 7
Into a bowl or molcajete, add half your diced onions, all your diced jalapeños, half your cilantro and half your salt. Mix into a fine paste.

Add your avocados and mash. Don't overly mash them as you still want some nice chunks in there.

Add the remaining diced onions, cilantro, tomatoes, lime juice and salt to taste.

Optional: Heat your tortillas to get some nice color.

In another bowl, mix together your shredded cabbage, mayo, lime juice, salt and pepper.

To build your taco, place some cabbage on the bottom of a tortilla, add some pieces of chicken, top with a big spoonful of guacamole and garnish with some fresh cilantro. Enjoy!
