Instructions
Step 1
Bring a pot of water to a boil. Cook rigatoni until al dente. Drain and set aside.
Step 2
In a large skillet, heat olive oil over medium heat.
Step 3
Add onion and red pepper flakes, cook until onion is soft.
Step 4
Add in sausage and cook until no longer pink.
Step 5
Stir in minced garlic and tomato paste and cook for another minute.
Step 6
Add grape tomatoes and broth. Season with salt and pepper. Cook until tomatoes begin to burst, about 10 minutes. Press slightly to release juices.
Step 7
Add zucchini and cook until tender.
Step 8
Add cooked rigatoni. Mix well.
