6 Tablespoonsyogurt
12 Tbspolive oil
2 tspdried oregano
2 tspgarlic powder
2 tspground paprika powder
2 tspsea salt
2 tsppepper

Step 1
Par-freeze the chicken breasts for 2 hours (this helps with thin slicing), then slice thin, small slices. Add all other ingredients for the marinade, then combine with the sliced chicken until all chicken is covered. Store in the fridge for at least 2 hours before cooking. This will help develop incredible flavor and tender texture.
Step 2
Heat 1 tablespoon of a high-heat cooking oil, such as avocado oil, in a sauteeing skillet over medium-high heat. Add just enough chicken to cover the bottom of your skillet (you may have to cook it in 2 shifts) and cook for several minutes until cooked thoroughly and browned. If you have a griddle, you can cook the chicken on it instead as well.

To make dough mix all ingredients together until I becomes a dough. Tip the dough onto a lightly oiled surface and knead well for 5-8 minutes until the dough is soft and elastic. Alternatively, use a stand mixer fitted with a dough hook to mix and knead the dough for two minutes one slow and 5 minutes on 5 minutes on medium speed.
Step 4
Return the dough to a bowl and cover with a large freezer bag and leave to rise for two hours

Heat your oven to 450 and put a baking sheet in so jt heats up
Step 6
Tip the dough onto a lightly floured surface and knock it back by folding the dough inwards over and over again for five to ten minutes to knock out all the air
Step 7
Divide the dough into 8 equal pieces and shape into balls roll into 1/4-1/3 inch thick sprinkle with sesame seeds if using and press firmly to adhere
Step 8
You may need to cook in batches. Take the hot baking sheet, dust with flour and lay the pitas on it. Bake the pitas for 5-10 minutes or until then start to color
Step 9
Transfer to a plate. Piling the pitas on top of one another and cover with a clean cloth until they’re cool.
