Coconut Chia Seed Pudding

Coconut Chia Seed Pudding is a creamy, nutritious dessert or breakfast treat that's both delicious and easy to make! It only takes four main ingredients and your choice of toppings- the options are endless! I like to serve mine with mangoes, toasted almonds and a drizzle of coconut cream but you can top it with whatever that you like! You just mix chia seeds with coconut milk, yogurt (you can use any type- plain, flavored, or greek), add a bit of sweetener like maple syrup or honey, and let it sit in the fridge until it thickens up like pudding. The coconut milk gives it a tropical flavor that's light and refreshing. If your Coconut Chia Seed Pudding is too thick, you can easily fix it by adding a bit more liquid like extra coconut milk, almond milk or even water until you reach the desired consistency. This pudding is a great healthy, plant-based snack. It's packed with fiber, omega-3s, and antioxidants, so it's super good for you and tastes wonderful too!

Step 1
In a mixing bowl, whisk together the coconut milk, yogurt, chia seeds, and maple syrup (or honey) until well combined.

Place the pudding in an airtight container and refrigerate overnight. The chia seeds will soak up the liquid and form a pudding-like texture.
Step 3
Before serving, mix the pudding well to smooth out any lumps. If your Coconut Chia Seed Pudding is too thick, you can easily fix it by adding a bit more liquid like extra coconut milk, almond milk or even water until you reach the desired consistency. If you added a lot more liquid, you might need to adjust the sweetness by adding a bit more maple syrup, honey, or your preferred sweetener.

Serve the chia seed pudding with your favorite toppings and enjoy!
