Coconut Chia Seed Pudding is a creamy, nutritious dessert or breakfast treat that's both delicious and easy to make! It only takes four main ingredients and your choice of toppings- the options are endless! I like to serve mine with mangoes, toasted almonds and a drizzle of coconut cream but you can top it with whatever that you like! You just mix chia seeds with coconut milk, yogurt (you can use any type- plain, flavored, or greek), add a bit of sweetener like maple syrup or honey, and let it sit in the fridge until it thickens up like pudding. The coconut milk gives it a tropical flavor that's light and refreshing. If your Coconut Chia Seed Pudding is too thick, you can easily fix it by adding a bit more liquid like extra coconut milk, almond milk or even water until you reach the desired consistency. This pudding is a great healthy, plant-based snack. It's packed with fiber, omega-3s, and antioxidants, so it's super good for you and tastes wonderful too!
